Pulses
Pulses, also known as len ls, include
kidney beans (rajma), chickpea (chana),
and all the dals we eat such as arhar,
moong, masoor, and urad.
Oilseeds
There are many types of oils and
different oils are used in various parts
of India for cooking. Oil is extracted
from special seeds called oilseeds.
Oilseeds are crushed to get oil. Groundnut, soyabean, sesame, sunflower, olive and
mustard are some of the most commonly used oilseeds.
Fruits and vegetables
Fruits and vegetables play an important
role in our daily diet. They give vitamins
and minerals to our body. Mangoes,
bananas, apples, papayas, oranges and
grapes are some of the fruits that we
eat. Raisins, cashew nuts, almonds,
pistachio and walnuts are some of the
dry fruits we eat. We eat different parts
of plants such as roots. Potatoes ginger
and onions are stems. Spinach and
le uce are green leafy vegetables.
Spices
Spices are seeds, leaves, bark or roots of plants that have strong smell and taste. They
add colour and flavor to the food. Spices also help us to digest the food be er. Spices
are used in different forms - whole, chopped, ground, roasted, sautéed, fried and as
topping. They blend food to extract the nutrients and bind them in a palatable form.
